Breakfast Nut

They may look like there’s a lot of work involved, but smoothie bowls are simple, delicious and sure to please your tough, at-home breakfast crowd.  Bonus – you can hide all sorts of healthy ingredients in there and your littles will never know!  Check out this beauty of a bowl from our friends at Canadian Living:

Ingredients:

  • 1 large banana , sliced
  • 1/2 cup unsweetened almond milk
  • 1/4 cup oatmeal
  • 1 tablespoon almond butter
  • 1 teaspoon maple syrup
  • 1 teaspoon lemon juice
  • 1/2 teaspoon cinnamon
  • 1 tablespoon coarsely chopped toasted almonds
  • 1 tablespoon toasted coconut shavings

Method:

In blender, purée three-quarters of the banana, almond milk, oatmeal, almond butter, maple syrup, lemon juice and cinnamon. Spoon into bowl; garnish with remaining banana, almonds and coconut shavings.

Change it up!  Substitute 2 tsp cocoa powder for cinnamon and replace coconut shavings with chocolate shavings.  Or, add your fave berries, ground flaxseed for more fibre, or change up the nuts to keep things fresh.  You can find all the ingredients listed above, and so many more for different combos, at Bulk Barn and Fairway Market.
